Old Fashioned Iced Oatmeal Cookies

Feeling a bit nostalgic one day, I decide to whip up a batch of Iced Oatmeal Cookies. We were having friends join us for a picnic later that day and I was unsure of their dessert taste. Wanting to have something on hand that would require no time to make, I thought back to my favorite summer snack, Iced Oatmeal Cookies.

 I was super excited when I researched on Pinterest and came across Mother Thyme‘s recipe. It was terrific, easy to follow and just took a few minutes to make. Everyone gathered around the kitchen as soon as I began baking questioning, what’s in the oven?

Multiple times throughout the day, I was complimented on the cookies. They were very easy to ice, the kids ended up helping to dip the cookies. Which went well, as they were sturdy and held up nicely. The clean up was quick as well, which makes this a perfect recipe in my book.

When baking them, a few good ideas. You want to make sure to use the parchment paper when baking, they easily stick. They are a firm but chewy cookie. They are much better the next day and I cannot say how long they can last, as we have never seen them past two days. It seems that just about everyone loves these cookies! Ingredients
Servings: dozen
Instructions
  1. Preheat oven to 350 degrees. Spray baking sheets with cooking spray and set aside.
  2. Place rolled oats in a food processor or blender and pulse for about 10 seconds until coarse. DO NOT OVER GRIND! You want to have large pieces still.
  3. Mix oats with flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Using an electric mixer or wooden spoon cream butter and sugars.
  5. Add in eggs one at a time then vanilla extract.
  6. Gradually add in flour mixture until combined.
  7. Using a cookie scoop or make 2 tablespoon size balls and place on parchment paper on the baking sheet spacing about 2 inches apart.
  8. Bake for 10-12 minutes until the bottoms begin to brown.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Icing
  11. Mix confectioners sugar and milk together in a medium bowl. If too runny add more powdered sugar.
  12. Quickly dip tops of cookies into glaze and let excess drip off.
  13. Place the cookies back on the wire rack until the icing sets.
