I’m so excited about this month’s book review! Not only is it a great book, but you have the opportunity to win $1,000! It has been terrifically exciting and adventurous! I am trying to make sure I schedule “me time” this month. This is a true rarity around this household! I did get a chance to sneak away the other afternoon. (see the photo above, that was a real moment in my life! I swear blogging has become picture perfect!!!)  I ended up extending my 1/2 break to an hour and a wish list of plants for mother’s day! Carly is so very creative! I love how she took simply flowers and plants and made such a remarkable centerpiece that will certainly become a conversation starter at a dinner party.

Old Fashioned Iced Oatmeal Cookies Vertically Challenged Mom

Old Fashioned Iced Oatmeal Cookies

Feeling a bit nostalgic one day, I decide to whip up a batch of Iced Oatmeal Cookies. We were having friends join us for a picnic later that day and I was unsure of their dessert taste. Wanting to have something on hand that would require no time to make, I thought back to my favorite summer snack, Iced Oatmeal Cookies.

I was super excited when I researched on Pinterest and came across Mother Thyme‘s recipe. It was terrific, easy to follow and just took a few minutes to make. Everyone gathered around the kitchen as soon as I began baking questioning, what’s in the oven?

Multiple times throughout the day, I was complimented on the cookies. They were very easy to ice, the kids ended up helping to dip the cookies. Which went well, as they were sturdy and held up nicely. The clean up was quick as well, which makes this a perfect recipe in my book.

Old Fashioned Iced Oatmeal Cookies

Prep time – 15 mins    –    Cook time – 12 mins    –    Total time – 27 mins

Serves: 2 dozen

Ingredients

  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup (2 sticks) butter, softened
  • 1 cup light brown sugar
  • ½ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Spray baking sheets with cooking spray and set aside.
  2. Place rolled oats in a food processor or blender and pulse for about 10 seconds until coarse. DO NOT OVER GRIND! You want to have large pieces still.
  3. Mix oats with flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Using an electric mixer or wooden spoon cream butter and sugars.
  5. Add in eggs one at a time then vanilla extract.
  6. Gradually add in flour mixture until combined.
  7. Using a cookie scoop or make 2 tablespoon size balls and place on parchment paper on the baking sheet spacing about 2 inches apart.
  8. Bake for 10-12 minutes until the bottoms begin to brown.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Icing
  1. Mix confectioners sugar and milk together in a medium bowl. If too runny add more powdered sugar.
  2. Quickly dip tops of cookies into glaze and let excess drip off.
  3. Place the cookies back on the wire rack until the icing sets.

When baking them, a few good ideas. You want to make sure to use the parchment paper, they easily stick. They are a firm but chewy cookie. They are much better the next day and I cannot say how long they can last, as we have never seen them past two days. It seems that just about everyone loves these cookies! Please post how you altered the recipe or how your batch came out. I love to see how others improve on the recipe! If you have any questions please do not hesitate to ask, if I don’t know the answer, I will at least try to steer you into the right direction!

Kid Game Download

Our usage of Tablets, Computers, Video Games and Phones have exploded recently. Especially  in our house! I am a person who has grown up with a computer in my home at all times. When we moved to Tennessee eight years ago, there was no internet avaliable in our area. High speed internet just became avaliable in our area, just as our oldest daughter received a Nintendo 3DS for Christmas and Quinn got  a new Zeepad for his birthday, and a Nintendo DS for Christmas. So needless to say the kids internet usage went from 0% to well over two hours a day.

I love video games as much as my kids (okay I clearly don’t love them that much!) But, we do appreciate a good game around here! So my compromise is that they must spend half of their electronic time on an educational game. This has been much easier for my ten year old daughter than for my five year old son just due to the lack of engagement of the educational games for him. He can spy an Educational game a mile away and run! lol!

We are hooked on Dr. Panda’s Restaurant! Both my son and daughter love this game! While it’s not the ABC’s or 123, it does show your child cooking skills! I watched my son butter the skillet and dice the onions to saute them! Later that evening, I caught him making a Kiwi Smoothie in his play kitchen in his bedroom.

They even have to wash the dishes! There are a bunch of Dr. Panda Apps that we haven’t tried yet but, it seems that if they are half as great as the kitchen, they will be wonderful!

Phoenix as an A-B honor roll student. Every time she has gotten a B it has been in Social Studies. So when she came in from school excited to do her Social Studies homework, you can imagine my surprise! Once we downloaded the app and she logged in, we looked at the games her and her classmates were playing. She was very eager to be able to get a higher score than her teacher and classmates!

Quizlet is avaliable online, and for the Kindle and iPhone. It is a lot of fun, honestly, I’m going to have to make my own account and really check it out. I saw when I was researching it, that A LOT of teachers were using Quizlet to have students group study! I have been playing Trivia Crack but it was over her education level so I’m super excited to see Quizlet! But, if your looking for a bit of fun that doesn’t take a lot of time check out the Trivia Crack, you might like it!

Until next time! Have a great day! I hope these game reviews helped you! Please leave any questions or comments below! I would love to hear from you! Also if you have any game suggestions, please let me know! I’m always looking for a good educational app and sometimes just want to have fun playing a game!

Minecraft Bedroom

I promise that soon this blog will talk about more than just Minecraft ! But not today! Today I am going to show you all the great stuff I found to redecorate my now five-year-old son’s bedroom. The Minecraft birthday party went over so well and we were contemplating what theme we wanted to use to redecorate his room from toddler to big boy. We asked him about having more Minecraft stuff in his room and he was so excited! This works out great because he just received tons of Minecraft stuff for his birthday and we have the Minecraft Dynamite and Zombie from the party that we are going to utilize as well.

This 9 Cube Storage Unit Shelf would be a perfect place for him to put away his book bag, and lego boxes.

I like this brown Fabric Drawer to use in the cube shelf. I think between this brown and the green one below it would give a nice contrast to the dark shelf. I’m considering painting the shelf to look like stone, but i’m not sure.
